Thanks for keeping this thread going, Grant.
Quint, you wife's bread looks great. My brunch about an hour ago: I heated a thin layer of neutral oil (I used avocado oil for its high smoke point) in a 12-inch skillet, then added a layer of O'Brien potatoes (diced potatoes, onions, and sweet peppers). When these were starting to brown and crisp I added about 3 ounces of diced ham steak, and let this all cook (turning frequently) until the potatoes approached brown and crisp. Next I added one finely diced habanero pepper (aka Scotch Bonnet) to the top (I didn't want these to brown, just soften and lose some of the rawness, and let this cook covered for a minute or two. When the mixture seemed almost done I added 2 small eggs and scrambled them into mix. When the eggs seemed about half done I added some halved or quartered grape tomatoes of various colors. I arranged 2 small (street taco sized) soft flour tacos in a bowl and some torn parsley leaves torn off a patch growing beneath out mailbox, then quickly took it and my camera outside for a photo... Optional ingredients: sour cream or plain Greek yogurt, shredded cheese, and salsa. Don't blame me - I didn't vote for him! Nikon D7500 with Nikkor 18-300 mm; PSE2021, PSCS5 Ny Flickr Albums
