They're quite delicious, Natalie. My Italian aunt simmered them in the shell in white wine and added fresh garlic, olive oil and tomato paste. Poured the whole mix over some pasta then some Romano and fresh parsely.

I would bet the 5 S might be 5 spice powder. What do you say, Grant?

Quite right Steve. mussels are essentially steamed over an almost boiling liquid. I make a white wine sauce in a large pot. The veggies [garlic onion tomato] and bacon are first fried in olive oil and butter. Then wine is poured into the sauce and quickly brought to a boil. The mussels are added and the mussels are smothered in the cooking mixture.
Some of the sauce is reserved to pour over the mussels after they open. I use a pot with a clear lid to better able see when the mussels have opened as that is key. I discard any that have not opened as that indicates they may be dead.

Natalie, The ribs are first marinated in lemon and tamari or teriyaki - no longer than 1/2 hour. Then they are grilled over medium heat. While wet I sprinkle my sprinkle which Steve is again right [5s is Sweet Salty Smokey Spicy Sprinkle]
Once the ribs have dried out some I apply a wet sauce.
As both the Sprinkle and sauce contains sugar it is best to turn down the grill and barbecue over indirect heat.
I cut the racks apart to better cook them through & through laying them down on the cut sides. Saucing the open cut edges while they grill.

You may get tired of our Asian type food, but I must confess we try to eat that way at least once a week.
This time I made Char Siu, but did not feature it on the shot. I cut it up in tiny strips to add to fried rice noodle dish.
Next time:
However, here is the recipe.

This Chinese BBQ Pork (aka Char Siu) is out of this world good. Not dry at all. And the flavor (especially when smoked) is outstanding!

Prep Time: 30 minutes Cook Time: 1 hour Total: 1 hour 30 minutes

Serves: 8
Ingredients
• 2 lb pork tenderloin (or 2 Lbs pork tenderloin tips)
• 1/2 c. teriyaki sauce we used Mr. Yoshidas I would omit as the flavour takes over
• 1/2 c. chicken broth
• 1/4 c. soy sauce
• 1/4. c. ketchup Needs more
• 2 Tbsp. Hoisin sauce
• 4 cloves garlic I used 10 cloves
• 1 tsp. Chinese 5 spice powder optional
• a few drops red food coloring optional, it just gives it that Chinese BBQ pork look I used 10
Instructions
• Place pork in a large Ziploc bag.
• Combine all remaining ingredients in medium-sized bowl and pour into Ziploc bag with the pork.
• Press out all the air from the bag, seal tightly, and refrigerate.
• Marinade 4+ hours or overnight (the longer the better).
• Remove pork from fridge about 20 minutes before cooking to allow pork to reach close to room temperature. Drain marinade choose cooking method below:
To smoke the pork (preferred method):
• Set smoker/pellet grill to "high smoke" (220-degrees F) and remove when internal temperature reaches 147-degrees F* (this should take appx. 1 hour. Remove from smoker and wrap in foil. Allow to rest for 5 minutes before serving.
To grill:
• Grill over medium heat until internal temperature reaches between 147-160* (medium rare to medium). Remove when desired temperature is reached, wrap in foil.

This is what Char Siu is supposed to look like.

Grant, great looking and I'll bet tasting Asian food plate. Coincidently, I made Beef and Bok Choy for dinner last night but am not on the "photo ball" as well as you. I grabbed the fork too soon.

Homemade Babka. Still warm.

RE: Food - Adamphotoman - 04-16-2022

Poppy Seed filling?
Easter bread. The plate looks like a stsined glass window behind....
And doubly poignant with the Russian Ukraine situation....

RE: Food - Quint - 04-16-2022

Grant, there are no poppy seeds but this is a chocolate babka made with 90% Lindt chocolate bars. My Ukrainian grandmother always had some of various types. The plates are our standard dish fare. The babka was great with coffee this morning and there is more for later.
