That looks to be a very satisfying meal (post #300), Don.

And the fruit and your photos look great!

WoW! Beautiful bright colored fruit!

Brunch about 9:30 AM.

2 small russets, washed, peeled, diced, and seasoned with a GrillMates spicy garlic and pepper mixture; browning in avocado oil.

Meanwhile, 4-5 oz hot breakfast sausage in the same skillet, avoiding the oil to prevent burning.

When potatoes were about 3/4 browned, I added a mix of sliced bell peppers and white onions, stirring everything often.

I dropped 2 eggs in a spot I had cleared in the center,  moved skillet off the burner and covered with a lid, letting residual heat gently cook the eggs.

A satisfying meal; should last me for 10 to 12 hours.

Good looking supper / lunch.
Don,
Fruit is mouth watering too!

Here is a shot I made many years ago that I may have shared. Scanned from a 4x5 inch transparency.

My late supper of a favorite comfort food...

Scalloped or Au Gratin potatoes with large chunks of ham and some habanero salsa to spice things up a bit...
