Repost.  Smile

While I was in Texas I had some pretty good meals. Here are a couple of shots of 2 different fish dinners, one from my favorite Mexican restaurant in Kerrville and the other from a restaurant I stopped at in Lafayette, La on the way home from the festival. Both were red snapper with grilled shrimp - a good combo.

Great looking meals, Don.  We did some grilled short ribs tonight for dinner. A little wine and some good music helped.

Hi, Natalie !!!

I have to stop looking at this thread. I go and eat every time I do!

RE: Food - Dave - 06-20-2022

Looking good, everyone.

My roasted corn dish yesterday turned out pretty good for an ad-libbed, thrown together sort of thing.

One medium potato and 3 oz ham steak diced into 1/2 inch pieces, 4 oz frozen corn, one medium jalapeno in 1/4 inch dices, one small tomato in 1/2 inch dices, celery salt, cumin, black pepper, paprika/

After the corn thawed I charred it slightly in a 12 inch non-stick skillet along with the diced potatoes, diced jalapenos, and spices. When this looked about 2/3 done I added the diced tomato and covered to finish cooking. I should have gone for more heat (dried Thai pepper flakes and/or chipotle peppers plus their sauce) - that would have taken it from a pretty good meal to a very good one. Still, it was a fun and successful experiment.

Dave, your impromptu lunch bowl looks very good!  I like your creativity! I'm afraid I cook old school most of the time.
We did have steamed blue crabs to celebrate Father's Day.  I really craved some, first time this season for us. My grand daughter was also very happy about them. So good! I fried up the catfish and perch my brother and I caught, and made some cornbread muffins and of course, some sweet corn!  Was a good meal. I had turnip greens on the side, but they were in a bowl, cause I soak them in vinegar!!

Okay, I have 4 zucchini plants, and the challenge has begun, how to use all the squash!!  before the squash vine borers take over.....here are two ways I like to eat them.....one is sauteed with onions in a little olive oil, salt and pepper. The other is cut them into sticks, cover in a little olive oil, dip in mix of parmesan cheese, garlic powder, italian seasoning, salt and pepper......grill or bake in oven with a finish of broiling ......dip in marinara sauce!! Wonderful!!
